Tracey Mathews launched Trixie's Treats, a mobile cupcake truck, in January. While food trucks are a more common sight in larger cities, they're somewhat novel in the Lehigh Valley. Trixie's Treats appears to be a hit with customers. Lines and smiles form as soon as the cheerful green cupcake truck pulls up and parks outside a business.

A. Trixie’s Treats---a mobile bakery. We park outside businesses in the Lehigh Valley. We also do events, such as birthdays, showers, weddings, bar and bat mitzvahs, holidays and corporate functions.

A. Two years, but launched my new cupcake truck in January.

A. I am owner and operator of Trixie's Treats, with help from my husband and mom. My husband drives the truck.
Q. What is your specialty?
A. Gourmet cupcakes. Some of the cupcake flavors we sell are vanilla bean, chocolate vanilla, chocolate peanut butter, red velvet, going' coconuts, lemon lovin', mint madness, peanut overload, chocolate-covered cherry, salted caramel caramel, Bailey's coffee, makin' whoopie, banana fluffernutter, French toast with bacon, wasted, chocolate malted milk, snickerdoodle and Trixie's signature cupcake.
I also make chocolate-covered pretzel rods, brownies and dessert bars, chocolate-covered strawberries and assorted cheesecakes.
Q. What’s your best-selling cupcake? What’s in it?
A. Banana Fluffernutter. It's a banana cupcake with marshmallow buttercream filling and peanut butter icing.
Q. What is your mission statement or philosophy behind running your business?
A. Committed to making sure every customer has the highest quality service and products again and again!
Q. Is there a history regarding your business you’d like to share?
A. I come from a long line of women who love to bake. My great grandmother was the head chef in a castle in Austria from the 1930s to 1950s. Her recipes were handed down through generations and I was always in the kitchen with my mom growing up. I always enjoyed it and decided to try doing it part-time which is how it started. When I found myself getting up at 4 a.m. and 5 a.m. to bake before going to work my full-time job I realized I had to make a decision. I heard about the cupcake trucks that are sweeping the large cities and decided to go that route!

A. To pave the way for the mobile food truck industry in this area.

A.Owned by me but as I mentioned, I get help from my husband and mom.

A. All leftover cupcakes are donated to Turning Point of Lehigh Valley, a safe place for victims of abuse. My cheesecakes are featured desserts every week at Jack Callaghan's Ale House in Allentown.
